琥珀酸二鈉：簡稱WSA，俗稱干貝素，是近年來調(diào)味品中廣泛應(yīng)用的鮮味劑。它較多存在于貝類、蝦、蟹等海產(chǎn)品中，對這類食品呈現(xiàn)的鮮美味道起到了很重要的作用。另外，琥珀酸二鈉在其他植物，如香菇中也有存在。我國食品添加劑衛(wèi)生標(biāo)準(zhǔn)規(guī)定其可應(yīng)用于調(diào)味品中。
琥珀酸二鈉分為結(jié)晶琥珀酸二鈉和無水琥珀酸二鈉。目前，食品工業(yè)中最常用的為晶體琥珀酸二鈉，通常含有6個結(jié)晶水。琥珀酸二鈉是白色結(jié)晶性顆?；蚪Y(jié)晶性粉末，無臭、無酸味，有特殊貝類滋味，味覺閾值0.03%，易溶于水（20℃ 35 g/100mL），不溶于乙醇。結(jié) 晶琥珀酸二鈉在120 ℃時完全失去結(jié)晶水，即為無水琥珀酸二鈉，無水琥珀酸二鈉鮮度約為結(jié)晶琥珀酸二鈉的1.5倍。
琥珀酸二鈉由琥珀酸與氫氧化鈉反應(yīng)制成，經(jīng)120℃熱風(fēng)干燥，粉碎得無水物。目前我國許可使用的有機(jī)酸類鮮味劑只有琥珀酸二鈉一種。
1．琥珀酸二鈉與谷氨酸鈉配合使用，一般使用量為谷氨酸鈉的10%左右。我國《食品添加劑使用衛(wèi)生標(biāo)準(zhǔn)》（GB2760-1996）規(guī)定，琥珀酸二鈉可用于調(diào)味料，最大用量為20 g/kg。
2．使用范圍及使用量

（2）實際使用參考：本品作為調(diào)味料、復(fù)合調(diào)味料，常用于醬油、水產(chǎn)制品、調(diào)味粉、香腸制品、魚干制品，用量為0.01%~0.05%；用于方便面、方便食品的調(diào)味料中，具有增鮮及特殊風(fēng)味，用量0.5%左右。作為清酒、合成清酒的調(diào)味料，用量為0.01%~0.09%；作為醬油、醬、清涼飲料、糕點的調(diào)味料，用量為0.02%~0.09%。

Disodium succinate is divided into crystalline succinic acid disodium and anhydrous succinic acid disodium. At present, the most commonly used in the food industry is disodium succinate, which usually contains 6 crystalline waters. Disodium succinate is a white crystalline particle or crystalline powder, odorless, acid-free, with a special shellfish taste, taste threshold of 0.03 %, soluble in water(20 °C 35 g/100 mL), insoluble in ethanol. The crystal disodium succinate completely loses crystalline water at 120 °C, that is, anhydrous succinate disodium, anhydrous succinate disodium freshness is about 1.5 times that of crystalline succinate disodium.
Disodium succinate is made by reacting succinic acid with sodium hydroxide and is dried by hot air at 120 °C to crush anhydrous material. At present, only one type of sodium succinic acid is used as a kind of organic acid flavor agent.
